vin de Pays d’Oc Red
This wine comes from vineyards in the northernmost area of the Coteaux du Languedoc.
It is composed of Syrah and Cabernet Sauvignon, but also of other traditional varieties (from old vines) of Grenache and Carignan.
This particular situation (slow ripening of the grapes) makes these noble grape varieties fruity with very special tannins.
Yields are naturally low on the old vines Carignan and Grenache.
Grapes are totally de-stemmed.
Traditionally vinified with délestage.
Matured for 24 months in vats.
Bottled onsite in the Languedoc without pumping, by gravity.
