Côtes de Provence – NOWAT white Cuvée
This wine is made from Vermentino also called Rolle, usually complemented with Semillon and Ugni Blanc (Trebbiano).
(Yields 30 hl / ha).
The vines are 20 to 50 years old. They are colcated on colluvium clay slopes (schist land in a small isolated valley of the Massif des Maures), on the limestone hinterland and on the Clos de la Procure (for Ugni Blanc), and they are harvested at phenolic maturity.
The grapes were harvested manually.
The juices from the wine press did not undergo any addition of yeasts, enzymes or acidifying agents, and they are never pumped. Pressing is done manually with a vertical press.
The juices were divided and transferred for fermentation to barrels previously used for two seasons and new French oak barriques from the small but exceptional Jupille forest. They were matured on lees without batonnage between 12 and 18 months depending on the vintage.
