Côtes de Provence – NOWAT red Cuvée
This wine is made of 4 grape varieties: Cabernet Sauvignon, Mourvedre, Carignan and Syrah.
The vines are 20 years old (Syrah and Cabernet) from colluvium clay slopes (schist land on a small isolated valley of the Massif des Maures).
The Carignan and Mourvèdre came from our vineyard (domaine du clos de la Procure mainly clay limestone – the terroir is known as the interior valley). These are old vines of 50 years or more with low yields. The winery is certified organic by Ecocert.
The grapes were harvested manually and fully de-stemmed.
Vinification is done in small open tanks (stainless steel tank of 1000 l).
After crushing by foot, the wines do not have any yeasts or enzymes added, and they are never pumped. The cap is punched daily by hand above the vat during 15 to 30 days.
This wine is aged 16 to 18 months in French oak barriques used for 1 or 2 seasons (from prestigious estates in Bordeaux and Burgundy).
Bottling: manually by gravity (no pumping) during the waning moon and with high atmospheric pressure.
