Costières de Nîmes AOC
This wine comes from pebbly soil between the garrigue of the Cevennes (close to the Coteaux du Languedoc) and the Rhone Valley.
It is composed mostly of Syrah from poor clay-limestone strata harvested at full maturity, from very old vines with low yields of Grenache (Mourvedre?).
Grapes are totally de-stemmed. Vinification happens at low temperature around 20°C and maceration lasts 20 days in order to retrieve color and plenty of fruit without aggressive tannins.
Matured in French oak barrels previously used for 3 seasons, and concrete tanks for 10 months.
