« Domaine du Clos de La Procure »
This wine is made from vines at our property in Carnoules, on the Var coast at the northern limit of the Provencal maritime influence (geological area called Permian depression – passage from primary to secondary series).
The vines (trained in the gobelet shape and 30 to 50 years old) are arranged in terraces bounded by stone walls, paths or rows of olive trees (of the Clos variety).
The soil is clay limestone with some detritus elements (slope colluviums with a clay matrix) originating at the southern limit of the Maures schist mountain range. The exceptional presence of groundwater at a depth of ten meters guarantee a good water supply for the vineyard.
• Red: Blend of Grenache Mourvedre and, depending on the vintage, Syrah, Cinsault and Carignan.
• Rose: Saignée of Cinsault and, depending on the vintage, a little Ugni Blanc and Carignan.
• White: 100% Ugni Blanc.
The manually harvested grapes are sorted ant totally de-stemmed. The wine is vinified in small vats to preserve the character of each plot of land.
After crushing by foot, the wines do not have any yeasts, sugars, enzymes or acidifiers added, and they are never pumped (Nowat process).
For the reds (80% of our production by volume) the cap is punched daily by hand over the vats, for 15 days. The juices coming from a manual vertical press are blended with the free run juices.
Matured in French oak barriques purchased from the best wineries in Bordeaux and Burgundy.
